Well, the recipe is way less complicated than the name of this blog…and so so delicious. After I eat, I’m always wanting a little bite of something sweet to give me that finished off feeling after a tasty meal (where’s the chocolate, am I right?) But recently I’ve started craving ice cream. If you read my recent blog about my love of coconut you’ll know I ate an entire pint of Cherry Amaretto Coconut Bliss icecream and now my freezer is empty! What’s a girl to do?!?
Don’t worry, I’ve got you covered. It’s this thing called Nicecream. Nice + Icecream = your recipe for the week. This is brilliant. If you’re on pinterest, chances are that you’ve seen a recipe that calls for blended frozen bananas and how it tastes like ice cream. I was like ‘yeah, ok sure, and veggies taste like candy.’ But I stand corrected! Toss me the dunce hat.
When blending frozen bananas and whatever flavor your heart desires, you get an amazing texture and sweet blended treat that truly does taste like ice cream. In the spirit of fall, and of my favorite Rawxies cookies, I’ve come up with a recipe for you. Make it and wow your family at Thanksgiving or any gathering—it might be nice to have a healthy dessert option.
Rawxies Pumpkin Nicecream Sandwich
- 2 frozen bananas (I suggest chopping them in big chunks and peeling before freezing)
- 1/2 cup pumpkin puree. (Note: I added extra pumpkin, so mine is a little darker).
- dash of cinnamon + 1/4 tsp nutmeg + 1/4 tsp ginger. (Spice to taste).
- 1 Tblsp agave syrup (or your favorite sweetener). Feel free to add more of this if you want your NiceCream sweeter.

So now what? Put items in blender, blend until smooth and ta-da! That is eat. Crazy easy right?
You can eat directly after blending, or for a thicker ice cream texture, let it freeze overnight. To assemble your sandwich, take two Rawxies Cranberry Pecan cookies and put pumpkin NiceCream in between each cookie. Now you’ve got an adorable treat to share….or not! Want to make it even more delicious? Top your leftover nicecream with chocolate chips for a chocolate pumpkin-y goodness.
